You found the ingredients with a low carbon footprint: Apples, Wheat flour, Milk, Sugar, Lemons. Remember if you get local ingredients your footprint reduces even more!
You have almost ESCAPED! That is after you bake apple muffins with lemon glaze.
RECIPE:
Apple muffins:

2 small apples/1large apple -
peeled, cored and diced (or other fruits such as berries, pears, peaches, bananas)
1 cup all-purpose flour (or any other flour substitute)
1/2 cup sugar (or honey)
1/4 cup melted butter (or oil)
1/2 cup milk (or any milk substitute - you can use water): You might need to add 1/4 cup more if batter is too thick
1and 1/2 tsp baking powder
optional: 1/2 tsp cinnamon powder

Blend everything except flour and baking powder in a blender. Whisk the flour and baking powder into the blended batter. Fill muffin/cupcake tray lined with cupcake liners. You can use a cake pan as well to bake a cake instead.
Bake at 350F for 25-30 minutes. on the middle rack of the oven.

You can make these really quickly in the microwave but the texture will be a bit soggy.
You can put the batter halfway full in a coffee mug and microwave for 1 to 1 and half minutes.

You will make a dozen muffins.

Lemon glaze (optional): Do not prepare before muffins are ready
1tsbp lemon juice
3tbsp sugar (icing sugar if you have it)
Mix in microwave safe bowl and microwave for 30s. Stir and then microwave again for 20s - 30s. You can heat this over a stove if you do not have a microwave.
Drizzle over the prepared muffins immediately.
